2 pounds potatoes, peeled and cut into 1-inch cubes
4 cloves garlic, peeled
5 slices bacon, cut into 1/2 inch pieces
1 cup thinly sliced green onions
1/4 cup low-fat milk, warmed
1/2 cup low-fat sour cream
1 t. salt
1/2 t. pepper
1. In a large pot, immerse the potatoes and garlic in water.
2. boil until the potatoes ar fork-tender, about 30 minutes
3. Fry the bacon in a skillet until crisp, drain on paper towels
4. Pour out all but 1 teasppon of the bacon drippings from the pan
5. Add the green onions to the drippings, and saute until soft but onot brown. Return the bacon to the skillet and stir to combine,
6. Drain the poatoes and garlic and return to the ot
7. Mah the poatoes with the milk, sour cream, salt, and pepper. Stir in the bacon and green onions.
8.reheat, if necessary, before serving.

Baby Back Ribs
three 1-pound racks pork baby back ribs, cut in half
1 cup apple cider vinegar
1 cup ketchup
1/4 cup apple cider vinegar
3 T. dark brown sugar
3 T. Worcestershire sauce
1 t. liquid smoke
1/2 t. salt
1. Place the ribs in a large pot and fill the pot with enough water and 1 cup apple cider vinegar to cover the ribs
2. Bring the water to boil, reduce the heat, cover, and simmer for 1 hour or until the ribs are fork-tender
3. while the ribs are boiling, combine the remaining ingredients in a medium saucepan and bring to boil.
4. Reduce the heat and simmer, uncovered, stirring often, for 30 minutes or until the sauce miture it slightly thickened.
5. Preheat the broiler
6. Place the boiled ribs, meat side down, on a broiler pan.
7. brush with half the sauce and broil 4 to 5 inches from the heat source for 6 to 7 minutes, or until the edges are slightly charred.
8. Turn the ribs over, brush with the remaining sauce, and broil for an additional 6 to 7 minutes, or until the edges are slightly charred.
